  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • ½ cup sour cream
  • ¼ cup chopped green onions

  1. Cook elbow macaroni in salted water until al dente (7-8 minutes). Drain but do not rinse.
  2. In a large skillet over medium heat, brown the ground meat until fully cooked (5-7 minutes).

  4. Lower heat, add shredded cheese, stirring until melted (3-5 minutes).
  5. Fold in cooked macaroni and black beans until well mixed.
  6. Serve hot with sour cream and green onions on top.
