  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 2 fresh lemons (zest and juice)
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large pot over medium-high heat. Sear the chicken for 5-7 minutes per side until golden brown, then remove.
  2. In the same pot, add minced garlic and sauté until fragrant for about 30 seconds.
  3. Stir in orzo pasta and chicken broth; bring to a simmer ensuring all pasta is submerged.
  4. Add lemon zest, juice, and thyme leaves; stir well.
  5. Nestle the seared chicken back into the pot along with spinach or kale. Cover and cook for about 10 minutes until the pasta absorbs most of the liquid.
  6. Remove from heat and sprinkle with chopped parsley before serving.
