Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/2 cup freshly squeezed lemon juice
  • 2 tbsp capers, rinsed
  • 12 oz linguine or spaghetti
  • 3 tbsp extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare your ingredients: Mince garlic and gather everything on your countertop.
  2. Cook the pasta: In a large pot of boiling salted water, cook pasta according to package instructions until al dente. Drain, reserving some pasta water.
  3. Sauté the chicken: Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper. Sauté until golden brown on both sides (about 5-7 minutes per side). Remove and set aside.
  4. Create the sauce: In the same skillet, add more olive oil if needed. Add minced garlic and sauté until fragrant (about 30 seconds). Pour in lemon juice and chicken broth while scraping up browned bits from the pan.
  5. Add capers & simmer: Stir in capers and let simmer for about 3 minutes until slightly thickened; adjust seasoning if necessary.
  6. Toss it all together: Add cooked pasta and sliced chicken to the sauce, mixing gently to coat everything evenly. Add reserved pasta water if needed for creaminess.
