  • 1 cup bell peppers (red, yellow, green), sliced
  • 1 medium zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic for about 30 seconds until fragrant.
  3. Add sliced bell peppers and zucchini to the skillet; cook for 3-4 minutes until slightly softened.
  4. Stir in halved cherry tomatoes and fresh spinach; cook until spinach wilts but remains vibrant.
  5. Combine the cooked pasta with the sautéed vegetables in the skillet. Season with salt and pepper to taste, tossing gently to meld flavors for about 2 minutes.
  6. Remove from heat, sprinkle with grated Parmesan cheese, and serve immediately.
