  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 medium yellow onion, chopped
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • Fresh cilantro (optional)

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in taco seasoning, then mix in the canned tomatoes and both types of beans.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Lower heat and let simmer uncovered for 20-30 minutes.
