  • 1 lb ground beef (80/20)
  • 4 slices rye or sourdough bread
  • 4 slices Swiss or American cheese
  • 1 medium sweet onion, thinly sliced
  • 3 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat. Add 1 tbsp butter and cook the sliced onions until translucent and fragrant, about 5 minutes.
  2. In a bowl, season ground beef with salt and pepper, then form into four patties slightly larger than the bread slices.
  3. Heat another skillet over medium-high heat; sear patties for 3-4 minutes on each side until browned.
  4. During the last minute of cooking, place cheese slices on top of each patty and cover to melt.
  5. Butter one side of each bread slice. On the non-buttered sides, layer patties with onions and more cheese if desired, topping with another slice of bread.
  6. Grill sandwiches in the same skillet over medium heat until golden brown on each side, about 3-4 minutes per side.
