  • 1 lb large shrimp (deveined)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 medium onion (sliced)
  • 4 flour tortillas
  • 2 tbsp olive oil (divided)
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp paprika
  • Juice of 1 lime
  • Fresh cilantro (optional, chopped)

Instructions

  1. Prepare the shrimp by rinsing under cold water and patting dry.
  2. Slice the bell peppers and onion into thin strips for even cooking.
  3. In a bowl, toss the shrimp with olive oil, cumin, chili powder, paprika, salt, and pepper until well coated.
  4. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Sauté the seasoned shrimp for about 3-4 minutes until they turn pink and opaque, then remove from the skillet.
  5. In the same skillet, add another tablespoon of olive oil and sauté the sliced peppers and onion for about 5-7 minutes until tender.
  6. Return the cooked shrimp to the skillet with vegetables, drizzle with lime juice, and stir briefly to combine before serving in warm tortillas.
