  • 2 medium sweet onions, chopped
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup red wine (preferably dry)
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping onions and mincing garlic.
  2. Heat olive oil in a large pot over medium-high heat. Sear short ribs until browned on all sides (3-4 minutes per side). Remove from pot.
  3. Add onions and garlic to the pot; sauté until golden brown. Deglaze with red wine, scraping up flavorful bits from the bottom.
  4. Return short ribs to the pot along with beef broth and herbs. Bring to a simmer.
  5. Cover and reduce heat to low; braise for 2-3 hours until meat is fork-tender.
  6. Serve over creamy mashed potatoes or polenta.
