  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped

  • 12 oz smoked sausage, sliced
  • 6 cups low-sodium chicken broth
  • 1 tbsp Cajun seasoning
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Rinse the beans under cold water and soak them overnight or boil for 10 minutes and rest for an hour.
  2. In a large pot over medium heat, add oil. Sauté onion, bell pepper, and celery until softened (about 5 minutes).
