Meatloaf Muffins are a delightful twist on the classic comfort food, combining savory flavors in fun, individual servings. Perfect for busy weeknights or festive gatherings, these mini meatloaves are easy to prepare and can be customized with your favorite seasonings or add-ins.

Ingredients

  • 1 lb lean ground beef
  • 1 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1/2 cup chopped onion
  • 1/3 cup ketchup + extra for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined.
  3. Scoop the mixture into each muffin cup until three-quarters full.
  4. Drizzle additional ketchup on top of each muffin.
  5. Bake for 20-25 minutes or until tops are golden brown and firm.
  6. Let cool slightly before serving.
