  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup onions, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth (low-sodium)
  • 1/2 cup flour
  • 1/2 cup vegetable oil
  • 2 tbsp Cajun seasoning
  • 2 cups cooked white rice (for serving)
  • 1/4 cup green onions, chopped (for garnish)
  • 1/4 cup parsley, chopped (for garnish)

Instructions

  1. Create the roux: In a large pot over medium heat, combine equal parts vegetable oil and flour. Stir constantly for about 15-20 minutes until it turns deep brown.
  2. Add vegetables and sausage: Mix in the onions, bell peppers, okra, and Andouille sausage; cook for 5–7 minutes until softened.
  3. Incorporate broth and seasonings: Pour in chicken broth while adding Cajun seasoning. Bring to a boil then reduce heat to simmer for about 30 minutes.
  4. Add shrimp: Incorporate the deveined shrimp during the last 10 minutes of cooking; cook until shrimp turns pink.
  5. Serve: Ladle gumbo over fluffy rice and top with green onions and parsley.
