  • 1 medium onion, diced
  • 1 cup bell peppers (red or yellow), chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1.5 cups shredded cheddar cheese
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • Salt and pepper to taste
  • 1 tsp Italian herbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, drizzle olive oil and sauté diced onions and minced garlic until translucent.
  3. Add ground turkey; cook until browned, stirring occasionally.
  4. Mix in chopped bell peppers and frozen mixed vegetables; cook until heated through.
  5. Pour in cream of mushroom soup; season with salt, pepper, and Italian herbs. Stir until well combined.
  6. Layer half of the mixture in a greased baking dish; top with half of the cheddar cheese.
  7. Add remaining mixture and finish with the rest of the cheese.
  8. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
