  • 2 tbsp soy sauce (low-sodium)
  • 2 tbsp tomato paste
  • 1 tsp pimento seeds (allspice)
  • 1 scotch bonnet pepper, whole (adjust for heat)
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 2 cups chicken broth or water
  • Salt and pepper to taste

Instructions

  1. Rinse the chicken under cold water and pat dry. Season generously with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat. Sear the chicken pieces skin-side down until golden brown (about 7 minutes), then flip them over.
  3. Add onions, bell peppers, and garlic; sauté until softened (about 5 minutes).
  4. Stir in tomato paste, soy sauce, thyme, pimento seeds, and scotch bonnet pepper. Cook for another minute to blend flavors.
  5. Pour in chicken broth or water until chicken is submerged. Bring to a boil; reduce heat and simmer covered for about 30 minutes.
  6. Stir in carrots and potatoes; cook uncovered for an additional 20 minutes until vegetables are tender.
