  • 2 lbs chuck roast, cut into chunks
  • 4 dried guajillo chilies, stems and seeds removed
  • 1 tsp cumin seeds
  • 4 cloves fresh garlic
  • 1 medium onion, chopped
  • 4 cups beef broth
  • 1/2 cup fresh cilantro, chopped
  • 12 corn tortillas
  • Lime wedges (for serving)

Instructions

  1. Season the chuck roast with salt and pepper. Cut it into smaller chunks for quicker cooking.
  2. Soak the guajillo chilies in hot water for 15-20 minutes until soft.
  3. In a large pot, heat oil over medium heat. Sauté chopped onions and garlic until fragrant.
  4. Drain the chilies and blend them with sautéed onions, garlic, cumin seeds, and beef broth until smooth.
  5. Pour the sauce over the seasoned meat in the pot. Simmer on low for 3-4 hours until fork-tender.
  6. Shred the meat with two forks. Warm corn tortillas and fill them with shredded meat, topping with cilantro and a squeeze of lime juice.
