  • 3 lbs beef chuck roast
  • 1 large sweet onion, diced
  • 5 cloves garlic, minced
  • 1/2 cup fresh cilantro, chopped (for garnish)
  • 2 chipotle peppers in adobo sauce, chopped
  • 1/4 cup freshly squeezed lime juice
  • 2 cups beef broth
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the beef chuck roast and cut into large chunks. Season generously with salt and pepper.
  2. In a skillet over medium heat, add olive oil and sauté the diced onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in cumin, oregano, and chopped chipotle peppers with adobo sauce; cook for an additional minute.
  4. Transfer the sautéed mixture to a slow cooker; add the beef chunks, lime juice, and beef broth until submerged.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat shreds easily.
  6. Shred the beef using two forks directly in its juices and serve hot with warm tortillas or over rice topped with cilantro.
