  • 4 cups all-purpose flour (500g)
  • 1 ½ cups filtered water (360ml)
  • 1 cup active sourdough starter (240g)
  • 2 tsp sea salt (10g)

Instructions

  1. In a large bowl, mix the flour and water until no dry flour remains. Allow it to rest for 30 minutes for autolyse.
  2. Add the sourdough starter and salt; mix until fully incorporated.
  3. Cover and let the dough ferment at room temperature for 4-6 hours, stretching and folding every 30 minutes.
  4. Once doubled in size, shape the dough into a round loaf and place it in a floured proofing basket for another 1-2 hours.
  5. Preheat your oven to 450°F (232°C) with a Dutch oven inside. Transfer the dough to the hot pot, cover, and bake for 30 minutes. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  6. Let cool completely before slicing.
