  • 1 medium yellow onion, chopped

  • Juice of 1 lime

Instructions

  1. Rinse the dried black beans under cold water and soak overnight or quick-soak by boiling for one hour.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onions until translucent (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
  3. Stir in soaked beans and vegetable broth; bring to a boil. Reduce heat and simmer gently for 45-60 minutes until beans are tender.
  4. Add cumin, salt, and pepper; stir well and simmer for an additional 10 minutes.
  5. Remove from heat and squeeze fresh lime juice over the frijoles before serving.
