  • 10 ripe tomatoes (about 2.5 lbs)
  • 1/4 cup fresh basil leaves, chopped
  • 2 tsp non-iodized salt
  • 1/4 cup freshly squeezed lemon juice
  • 2 cloves garlic, minced (optional)

Instructions

  1. Sterilize jars and lids in boiling water for 10 minutes. Set aside.
  2. Blanch tomatoes by cutting an 'X' at the bottom and boiling for 30 seconds, then transfer to an ice bath.
  3. Peel the cooled tomatoes, chop them into chunks, and place them in a large pot over medium heat.
  4. Add salt, lemon juice, garlic (if using), and basil to the pot; stir well.
  5. Simmer for about 30 minutes until the mixture thickens slightly, stirring occasionally.
  6. Fill sterilized jars with hot tomato mixture, leaving half an inch of headspace, clean rims, and seal with lids.
  7. Process jars in a water bath canner for 40 minutes; allow to cool on a towel-lined countertop.
