  • 1 (5 oz) can high-quality albacore tuna, drained
  • 3 tbsp mayonnaise (or Greek yogurt)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup finely diced celery
  • 2 tbsp finely chopped red onion
  • 4 slices sourdough or whole-grain bread
  • 2 tbsp butter

Instructions

  1. In a medium bowl, combine the drained tuna, mayonnaise, diced celery, and chopped red onion; mix well.
  2. Butter one side of each slice of bread generously.
  3. Spread the tuna mixture on the unbuttered side of two slices and top with shredded cheddar cheese. Place another slice of bread on top, buttered side facing out.
  4. Heat a skillet over medium heat and place the sandwiches in it. Grill until golden brown (about 3-4 minutes), then flip and cook until the other side is crispy.
  5. For extra melty cheese, cover the skillet with a lid while cooking.
  6. Slice diagonally and serve hot with pickles or chips.
