  • 2 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, torn
  • Salt and pepper to taste

Instructions

  1. Chop garlic and halve cherry tomatoes.
  2. Heat olive oil in a skillet over medium heat. Add garlic and sauté until golden.
  3. Add cherry tomatoes, seasoning with salt and pepper. Cook until softened (about 4-5 minutes).
  4. In boiling salted water, cook tortellini according to package instructions until they float (about 3-5 minutes).
  5. Drain tortellini and add to the skillet with tomatoes. Toss gently over low heat for 1-2 minutes.
  6. Remove from heat, top with Parmesan cheese and garnish with basil before serving.
