  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 1/2 cup teriyaki sauce
  • 2 cups fresh broccoli florets
  • 2 cups low-sodium chicken broth (or water)
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame seeds (for garnish)

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add oil and cook chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from skillet.

  4. Mix in teriyaki sauce gently, allowing simmering for about 15 minutes until rice absorbs most liquid.
  5. Transfer the mixture to a greased baking dish, placing the chicken on top.
  6. Bake for 25-30 minutes until bubbling and golden.
