  • 1 lb lean ground beef
  • 1 packet taco seasoning (approx. 1 oz)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup chopped onions
  • 2 cups crushed tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, brown the ground beef until cooked through. Drain excess fat.
  3. Add chopped onions to the skillet and sauté until translucent.
  4. Stir in taco seasoning, black beans, and diced tomatoes until well combined.
  5. Layer half of the beef mixture in the prepared baking dish. Follow with crushed tortilla chips and half of the cheese. Repeat layers once more.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil during the last 5 minutes to brown the cheese.
  7. Let cool for a few minutes before serving with optional toppings like sour cream or guacamole.
