Instructions

  1. Prepare your ingredients by washing and chopping the vegetables and mincing the garlic.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces in batches, cooking until golden brown on all sides (about 5 minutes per batch).
  3. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, and cornstarch until smooth.
  4. Remove cooked chicken and add garlic, bell peppers, and pineapple to the skillet; stir until fragrant (about 2 minutes).
  5. Return chicken to the skillet, pour in the sauce, mix gently to coat, and cook until bubbly and thickened (3–5 minutes).
