  • 4 medium poblano peppers
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish.
  2. Sauté onion and garlic in a skillet over medium heat until translucent.
  3. Add ground beef or turkey; cook until browned. Mix in rice, black beans, diced tomatoes, cumin, chili powder, salt, and pepper. Stir well.
  4. Halve the poblano peppers lengthwise; remove seeds. Stuff each half with the filling mixture. Top with shredded cheese.
  5. Place stuffed peppers in the baking dish and bake for 25–30 minutes until cheese is bubbly and golden.
