  • 4 medium bell peppers (any color)
  • 1 cup long-grain rice (uncooked)
  • 1 pound lean ground beef (or turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. In a large skillet over medium heat, sauté onions and garlic until fragrant (about 3-4 minutes).
  3. Stir in cooked rice and ground meat; season with chili powder, cumin, and salt. Cook until meat is browned.
  4. Add diced tomatoes and half of the cheese to the skillet; mix well until cheese melts.
  5. Stuff each bell pepper with the mixture, packing it tightly. Top with remaining cheese.
  6. Place stuffed peppers upright in a baking dish with a little water. Cover with foil and bake for about 30 minutes. Remove foil to brown the cheese for an additional 5 minutes.
