  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil (plus more for greasing)
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Place chicken breasts between plastic wrap and pound them to about 1/2 inch thick.
  3. In a bowl, mix spinach, feta cheese, sun-dried tomatoes, garlic powder, salt, pepper, and oregano.
  4. Stuff each chicken breast with about 2 tablespoons of the filling and fold over.
  5. Heat olive oil in a skillet over medium-high heat; sear each stuffed breast for 3-4 minutes per side until golden brown.
  6. Transfer to the baking dish and bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
