  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (for streusel)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, cream softened butter and granulated sugar until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with the wet mixture while alternating with sour cream until just mixed.
  5. For the streusel, mix brown sugar, cinnamon, flour, and optional nuts; cut in cold butter until crumbly.
  6. Pour half the batter into the pan, layer with half of the streusel, add remaining batter, and top with leftover streusel.
