  • 8 oz spaghetti or linguine
  • 1 lb raw large shrimp, deveined
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • ½ cup fresh basil, chopped
  • 2 tbsp lemon juice
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: red pepper flakes

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, heat the olive oil until shimmering. Sauté garlic until fragrant (about 30 seconds). Add shrimp and cook until pink (3-4 minutes).
  3. Stir in cherry tomatoes and season with salt, pepper, and optional red pepper flakes. Cook until tomatoes begin to burst (3-5 minutes).
  4. Add drained pasta to the skillet, mixing well. Gradually stir in reserved pasta water until desired consistency is reached.
  5. Remove from heat; mix in chopped basil and lemon juice. Serve garnished with grated Parmesan.
