  • 4 large eggs
  • 2 tbsp fresh cilantro or parsley, chopped
  • 2 tbsp extra virgin olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onion and bell peppers; sauté until soft and golden.
  2. Stir in the minced garlic, cumin, and paprika; cook for about 30 seconds until fragrant.
  3. Add the diced tomatoes to the skillet; simmer for about 10 minutes until bubbly.
  4. Create small wells in the sauce with a spoon; crack an egg into each well.
  5. Cover the skillet and let simmer for 5 to 7 minutes until eggs are set but yolks remain runny.
