  • 6 cups stale bread (sourdough or brioche), torn into pieces
  • 1 cup canned pumpkin puree (100% pumpkin)
  • 4 large eggs
  • 2 cups whole milk
  • 3/4 cup granulated sugar (or brown sugar for extra flavor)
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, whisk together pumpkin puree, eggs, milk, sugar, cinnamon, nutmeg, vanilla extract, and salt until smooth.
  3. Place torn bread pieces in the greased baking dish and pour the custard mixture over them. Let sit for 15 minutes to soak.
  4. If using nuts, sprinkle them on top. Bake for 45-50 minutes until golden brown and the center is slightly jiggly.
