  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar (light)
  • 1 cup creamy or crunchy peanut butter
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 36 chocolate kisses, unwrapped

Instructions

  1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Add peanut butter; mix until smooth. Beat in egg and vanilla extract.
  5. Gradually add dry ingredients to the wet mixture until well combined.
  6. Roll dough into 1-inch balls, coat in granulated sugar, and place on prepared sheets about 2 inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden. Press a chocolate kiss into each cookie immediately after removing from the oven.
  8. Allow cookies to cool slightly before transferring them to wire racks.
