  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar (for filling)
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 cups fresh peaches, diced
  • ½ cup chopped pecans (for topping, optional)

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press firmly into the bottom of the springform pan.
  3. In another bowl, beat softened cream cheese until smooth. Add sugar, sour cream, eggs one by one, vanilla extract, and cinnamon; mix until fully blended.
  4. Gently fold in diced peaches without overmixing. Pour the filling over the crust and smooth the top with a spatula.
  5. Bake for 45-50 minutes or until edges are set with a slight jiggle in the center. Turn off the oven and let it cool inside for an hour.
  6. Chill completely in the refrigerator for at least four hours before serving.
