  • 2 large eggs (room temperature)
  • 1/2 cup whole milk (or almond/oat milk)
  • 1/2 cup vegetable oil
  • 10 Oreo cookies (crushed)
  • Buttercream frosting (to taste)
  • Extra Oreos for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, whisk eggs, milk, and vegetable oil until smooth. Gradually add this mixture to the dry ingredients while stirring gently.
  4. Fold in the crushed Oreos carefully.
  5. Fill each cupcake liner about two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Cool in the tin for 5 minutes before transferring to a wire rack.
  8. While cooling, prepare your buttercream frosting and mix in crushed Oreos.
  9. Frost cooled cupcakes generously and top with additional crushed Oreos.
