  • 34 lbs chuck roast
  • 1 packet ranch dressing mix (1 oz)
  • 1 packet au jus gravy mix (1 oz)
  • 1 cup low-sodium beef broth
  • 45 garlic cloves, minced
  • 1 cup sliced bell or banana peppers
  • 4 tbsp unsalted butter

Instructions

  1. Pat the chuck roast dry and season generously with salt and pepper.
  2. In a hot skillet, sear the roast on each side for 4-5 minutes until golden brown.
  3. Transfer the roast to a slow cooker and sprinkle ranch and au jus mixes on top.
  4. Add minced garlic and sliced peppers, then pour beef broth around the sides of the roast.
  5. Place pats of butter on top before covering the slow cooker.
  6. Cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
