  • 1 cup cooked rice (brown or white)

  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese (your choice)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté diced onions until translucent. Add minced garlic and stir for about 30 seconds.
  3. Add ground meat and taco seasoning; cook until browned (7-10 minutes).
  4. Mix in cooked rice and diced tomatoes; blend for another 3-5 minutes.
  5. Stuff each pepper tightly with the mixture and place them upright in a baking dish.
  6. Cover with foil and bake for 25-30 minutes until tender. Remove foil, sprinkle cheese on top, and bake uncovered for another 5-10 minutes until bubbly.
