  • 2 lbs Yukon Gold potatoes, quartered
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 lemons (juiced and zested)
  • 1 tbsp fresh thyme or rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and scrub the Yukon Gold potatoes, then cut them into quarters.
  3. In a large bowl, toss the potatoes with olive oil, minced garlic, lemon juice and zest, fresh herbs, salt, and pepper until evenly coated.
  4. Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer.
  5. Roast for 30-35 minutes or until golden brown and crispy, tossing halfway through.
  6. Drizzle with additional lemon juice before serving hot.
