  • 2 lbs boneless, skinless chicken thighs
  • 4 green onions, chopped
  • 4 garlic cloves
  • 1-inch piece fresh ginger, grated
  • 2 Scotch bonnet peppers (or to taste)
  • ¼ cup soy sauce (low-sodium)
  • Juice of 2 limes
  • ½ tsp cinnamon
  • 2 tbsp brown sugar
  • 1 tsp allspice (pimento)

Instructions

  1. In a blender, combine green onions, garlic, ginger, Scotch bonnet peppers, soy sauce, lime juice, cinnamon, brown sugar, and allspice. Blend until smooth.
  2. Place chicken thighs in a bowl or zip-top bag and pour the marinade over them. Massage into the chicken and refrigerate for at least 2 hours or overnight.
  3. Preheat your grill to medium-high heat (400°F/200°C).
  4. Grill the marinated chicken for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C).
  5. Let rest for 5 minutes before serving.
