  • 2 tbsp lemon juice (freshly squeezed)
  • 34 tbsp cold water (as needed)

Instructions

  1. Prepare the Huckleberries: Rinse fresh berries under cold water; if using frozen, thaw completely.
  2. Make the Crust Dough: In a bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until crumbly.
  3. Add Wet Ingredients: Stir in lemon juice and cold water until dough forms a soft ball.
  4. Roll Out the Dough: Roll half of the dough into a circle about 1/8 inch thick for the bottom crust and place it in a greased pie pan.
  5. Create the Filling: In another bowl, combine huckleberries with sugar and optional cinnamon. Pour into pie crust.
  6. Top It Off: Roll out remaining dough for the top crust; cut slits for ventilation and cover filling. Bake at 375°F for 45 minutes or until golden brown.
