  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream (for serving)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil (for cooking)

Instructions

  1. In a skillet over medium heat, brown the ground beef for 5-7 minutes until fully cooked. Drain any excess fat.
  2. Stir in chili powder and cumin, cooking until fragrant (about 1 minute).
  3. On one half of each tortilla, layer the seasoned beef and a generous handful of shredded cheese. Fold the tortilla over.
  4. Heat olive oil in another skillet over medium heat. Cook each quesadilla for about 3-4 minutes per side until golden brown and crispy.
