  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. In a bowl, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  2. Place chicken thighs in a resealable bag or bowl; pour marinade over them. Seal/cover and refrigerate for at least 1 hour (up to overnight).
  3. Preheat grill to medium-high heat (around 400°F). Clean and lightly oil grates.
  4. Remove chicken from marinade; discard leftover liquid. Grill thighs skin-side down for 6-7 minutes until golden brown. Flip and cook for another 6-8 minutes until cooked through.
  5. Check doneness using a meat thermometer; ensure internal temperature reaches 165°F (75°C).
  6. Allow chicken to rest for 5 minutes before serving. Garnish with fresh parsley if desired.
