  • 4 medium Russet potatoes (about 800g)
  • 4 cloves fresh garlic, minced
  • 1 cup grated fresh parmesan cheese (about 100g)
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • Chopped parsley (optional, for garnish)

Instructions

  1. Wash the Russet potatoes under cold water. Peel if desired and cut into thin strips (1/4 inch thick).
  2. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
  3. Preheat the oven to 425°F (220°C). Drain and pat dry the soaked potatoes.
  4. Toss the dried potato strips with olive oil, salt, pepper, and minced garlic in a large bowl until evenly coated.
  5. Spread the fries on a parchment-lined baking sheet and bake for 25-30 minutes, tossing halfway through until golden brown.
  6. Remove from the oven and immediately sprinkle with grated parmesan cheese; let it melt slightly before serving.
  7. Garnish with chopped parsley if desired and enjoy hot!
