  • 2 large eggs
  • ½ cup buttermilk
  • 1 cup fine cornmeal
  • 1 jar (16 oz) dill pickle slices, drained
  • 2 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp cayenne pepper (adjust to taste)
  • Vegetable oil for frying

Instructions

  1. Thoroughly drain pickle slices on paper towels to prevent sogginess.
  2. Set up three bowls: one with flour mixed with garlic powder, paprika, and cayenne; one with beaten eggs and buttermilk; and one with cornmeal.
  3. Dip each pickle slice first in the flour mixture, then in the egg mixture, and finally roll it in cornmeal for an extra crunch.
  4. Heat oil in a deep skillet to about 350°F (175°C). Test readiness by dropping in a small piece of batter—if it sizzles, it's ready!
  5. Fry coated pickles in batches for 3–4 minutes on each side until golden brown.
  6. Drain excess oil on paper towels and serve immediately with your favorite dipping sauce.
