  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Season the chuck roast generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the roast on all sides until browned.
  2. Add sliced onions to the skillet, cooking them over medium heat until soft and golden brown (about 15 minutes). Stir occasionally.
  3. Add minced garlic and fresh thyme to the onions; cook for another minute until fragrant.
  4. Pour in the red wine, scraping up any browned bits from the skillet. Simmer until reduced by half.
  5. Transfer the roast and onion mixture into a slow cooker, adding beef broth. Stir gently to combine.
