  • 1 ½ cups granulated sugar (300g)
  • 2 cups all-purpose flour (250g), sifted
  • 4 large eggs, at room temperature
  • 2 tsp baking powder (8g)
  • ½ cup milk (120ml), whole or plant-based
  • 2 tsp pure vanilla extract (10ml)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy (3-5 minutes).
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, sift together flour and baking powder. Gradually add to wet ingredients, alternating with milk. Mix until just combined.
  5. Stir in vanilla extract, then pour batter into prepared pan.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack.
