  • 1 cup dried chickpeas (soaked overnight)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 2 tbsp olive oil (for frying)
  • 4 pocket-style pita breads
  • 1/4 cup tahini sauce

Instructions

  1. Rinse soaked chickpeas and blend in a food processor with garlic, parsley, cilantro, cumin, coriander, salt, and pepper until finely mixed but not pureed.
  2. Form the mixture into small balls about one inch wide.
  3. Heat olive oil in a skillet over medium-high heat. Fry falafel balls until golden brown on all sides (about 3-4 minutes per side).
  4. Warm pita bread in another pan or microwave for easy filling.
  5. Assemble by placing falafel in each pita, drizzling with tahini sauce, and adding your choice of vegetables.
