  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 12 oz andouille sausage, sliced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 14.5 oz canned diced tomatoes (with juice)
  • 4 cups chicken broth (low sodium)
  • 1 cup long-grain white rice
  • 2 tbsp Cajun seasoning
  • Green onions and parsley for garnish

Instructions

  1. Chop the chicken, sausage, bell peppers, onion, and garlic into bite-sized pieces.
  2. In a skillet over medium heat, sauté onion and garlic until fragrant (3–5 minutes).
  3. Transfer sautéed onion and garlic to the crockpot. Add chicken, sausage, bell peppers, diced tomatoes (with juice), chicken broth, rice, and Cajun seasoning.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is cooked through and rice is tender.
  5. Fluff gently with a fork before serving and garnish with chopped green onions and parsley.
