  • 1 lb 80/20 ground beef
  • 2 large yellow onions, thinly sliced
  • 1 cup seasoned breadcrumbs
  • 1 large egg (room temperature)
  • 1/2 cup low-sodium beef broth
  • 1 cup Swiss cheese, shredded
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Sauté sliced onions in a pan over medium heat until golden brown (15-20 minutes). Set aside some for topping.
  2. In a bowl, combine ground beef, breadcrumbs, sautéed onions (reserve some), egg, garlic powder, thyme, salt, pepper, and half of the beef broth; mix gently.
  3. Shape the mixture into a loaf and place it in a greased crockpot. Pour remaining broth around it and top with reserved onions and shredded Swiss cheese.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until fully cooked.
