  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Gather all ingredients, chopping onions and mushrooms.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, adding them to the skillet. Sear each side for about 6-7 minutes until golden brown and fully cooked. Remove from skillet and set aside.
  3. In the same skillet, add diced onions and minced garlic; sauté for 3-4 minutes until fragrant.
  4. Add sliced mushrooms to the pan, cooking for about 5-6 minutes until they soften.
  5. Pour in chicken broth followed by heavy cream; stir well and let simmer for about 5 minutes until slightly thickened.
  6. Return seared chicken to the skillet, spooning sauce over them. Allow everything to meld on low heat for a few more minutes before serving hot with freshly chopped parsley.
