  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or spaghetti
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Gather and prep all ingredients.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  3. Remove the chicken from the skillet and let rest. In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  4. Pour in heavy cream and chicken broth; simmer for about 5 minutes until slightly thickened. Gradually stir in grated Parmesan cheese until melted and smooth.
  5. Cook pasta according to package instructions until al dente; drain while reserving some pasta water.
  6. Slice cooked chicken and return it to the skillet along with drained pasta. Toss everything together, adding reserved pasta water as needed for creaminess.
