  • 8 oz fettuccine or penne pasta
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  2. Sauté Veggies: In a skillet over medium heat, heat olive oil. Add garlic and red bell pepper; sauté for about 3 minutes until fragrant.
  3. Prepare the Cream Sauce: Lower heat, add heavy cream and Cajun seasoning. Simmer for about 5 minutes until slightly thickened.
  4. Combine Pasta and Sauce: Toss drained pasta into the sauce, mixing well to coat. Add reserved pasta water as needed for consistency.
  5. Finish with Cheese: Remove from heat and stir in Parmesan cheese until melted. Season to taste.
  6. Garnish & Serve: Top with chopped green onions before serving warm.
